Mini Fish Pie with Chips and Veg

Ingredients:

for the topping:

750g Maris Piper or King Edward potatoes

splash of full fat milk

a generous knob of butter or drizzle of olive oil

for the béchamel sauce:

25g butter

25g plain flour, sifted

250ml full fat milk

100g mature Cheddar cheese

1/2 tsp English mustard powder

1/2 tsp paprika

salt, to taste

1/2 tsp black pepper

for the filling:

250g peas, pre-cooked

250g carrots, diced to the same size as your peas and blanched

250g shrimp, pre-cooked

500g cod fish, haddock or salmon, skin removed and cut into chunks

3 eggs, soft-boiled and halved

Method:

(preheat oven to 180*c and set aside a 11″x9″ ceramic baking dish onto a baking tray)

– bring a large pot of salted water to the boil

– peel and roughly chop potatoes, then boil in water for around 20-25mins, or until cooked

– while potatoes cook, prepare your béchamel by melting butter in a saucepan, then stirring in the flour

– cook the flour for a couple of minutes, then gradually whisk in the milk (do not pour too much milk in at a time or you will get a lumpy sauce)

– when all the milk is incorporated, melt in the cheese and spices and season to taste

– arrange fish, shrimp, eggs and vegetables in the bottom of your pie dish, ensuring they are evenly distributed

– pour your béchamel sauce evenly over the filling and season

– drain potatoes and mash with milk and butter until you achieve a smooth piping consistency (you will need to pass the potatoes through a Mouli or potato ricer if you intent to pipe them onto your pie, but for a quicker version, you can just mash and spoon on the spread with the help of a fork)

– cover filling with mashed potato, sprinkle top of pie with a mixture of Cheddar and Parmesan cheese, then sprinkle over black pepper

– bake in preheated over for around 30-40 minutes, or until golden on top and fish cooked through

– serve with veg and chips/fries

* You could make individual portions of this pie (as in the photos). Note that baking time will only be around 20 minutes.

** Serves 6
