Follow the scent and warm your fingers on a little paper bag of roast chestnuts. We are now well into chestnut season in France and will be able to enjoy this classic winter treat through until January.
If you plan to pick or buy fresh chestnut for roasting at home, here are some top tips:
- Look for heavy chestnuts with shiny, smooth shells
- Chestnuts can dry out quickly, so give them a squeeze to make sure they are plump and firm
- Store in the fridge
- Before roasting, snip a cross into the top of each nut to make peeling them easier
- Roast for 15 minutes, then allow to cool slightly until you can handle them, but not so long that they go cold – chestnuts are easiest to peel while still warm
