Mum's Peanut Cookies

Mum’s Peanut Cookies

A big batch of buttery, nutty, chocolatey cookies are sometimes a necessity.


225g unsalted butter, softened

200g caster sugar

200g soft light brown sugar

2 eggs

1/2 tsp vanilla extract

240g crunchy Organic peanut butter (use top quality stuff for top quality cookies!)

340g plain flour

2 1/2 tsp bicarbonate of soda

1/2 tsp salt

75g 70%+ dark chocolate, roughly chopped


(preheat oven to 170*c and line 4 baking trays)

– cream together butter and sugar

– add eggs one at a time, then add vanilla and peanut butter and mix until well combined

– add flour, bicarbonate of soda and salt, and mix in until it forms a smooth dough

– stir in chocolate until evenly dispersed in the mixture

– use dampened hands to arrange 1 1/2″ balls of cookie dough spaced well apart on your baking trays, and press down gently-they will spread and flatten during baking (if you don’t have enough trays or space in the over, you can bake in batches-put mix in fridge between bakes to keep cool for easier rolling)

– bake for 10 mins, or until golden brown (this will give you soft and chewy cookies; cook for a further 2-3 mins for crunchy cookies)

– leave cookies to cool for 1 min on trays, then transfer to a wire rack to cool completely
