Quick Cajun Shrimp Fajitas

Fajitas are a great way to eat a super fast and super healthy meal. This fusion version takes a Mexican classic and adds some creole, South American spice, served with cooling sour cream, tasty tomato salsa & chunky avocado as an alternative to a traditional guacamole.

Ingredients:

green bell pepper

red bell pepper

medium red onion

1 tbsp cajun spice mix

400g raw shrimp (shelled & de-veined)

6 soft flour tortillas

sour cream

tomato salsa (mild or hot, depending on preference)

1/2 avocado (chopped into 1cm chunks)

lime wedges (to serve)

flavourless oil (for cooking)

Method:

– finely slice onion and peppers

– heat 1-2 tbsp oil in a large skillet over a medium-high heat

– fry the onion and peppers until soft, stirring constantly to prevent burning (lower heart is necessary)

– sprinkle in the cajun spice mix and stir through

– remove onions and pepper from the skillet and set aside

– add the shrimp to the skillet and fry until cooked through and slightly golden (add a little oil if the pan is dry)

– return onion and peppers to the skillet and stir combine with the shrimp

– heat tortillas for 20 seconds in the microwave, or warm in the oven for 5 minutes

– place 2 tortillas on each plate and divide mix between them

– top mix with avocado, tomato salsa & sour cream

– fold and serve with a wedge of lime! It really couldn’t be more easy!
