Recipe: Oatmeal-Applesauce Pancakes

Oatmeal Applesauce Pancakes

Oatmeal Applesauce Pancakes

Start your day with a delicious health kick. All of the indulgence with none of the guilt. Transform your morning bowl of porridge into this tempting stack of pancakes-all you need to do is whizz up your oats in the blender, cook them in a little oil and top with whatever you like! I like to use coconut oil for a subtle hint of the tropics, creamy vanilla yoghurt and raspberries which pair well with the applesauce flavour, then sprinkle on some nuts for added crunch. What’s your favourite pancake topping? Share some inspiration in the comments below!

Ingredients:

1 cup oats

1/2 cup applesauce

1 egg

1/2 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp ground ginger

coconut oil (or olive if you prefer)

your favourite yoghurt

fresh raspberries

pecan nuts

flaked almonds

Method:

– blend oats, applesauce, egg and baking powder in a blender

– heat a little oil in a skillet over a medium heat and dollop round of the mixture into the pan (as big or small as you like)

– cook on one side until the top surface begins to bubble, then flip over and cook for a further minute or so.

– do this in batches, then divide between 2 plates, dollop on yoghurt and garnish with fruit and nuts
