Start your day with a delicious health kick. All of the indulgence with none of the guilt. Transform your morning bowl of porridge into this tempting stack of pancakes-all you need to do is whizz up your oats in the blender, cook them in a little oil and top with whatever you like! I like to use coconut oil for a subtle hint of the tropics, creamy vanilla yoghurt and raspberries which pair well with the applesauce flavour, then sprinkle on some nuts for added crunch. 1 cup oats
1/2 cup applesauce
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground ginger
coconut oil (or olive if you prefer)
your favourite yoghurt
– blend oats, applesauce, egg and baking powder in a blender
– heat a little oil in a skillet over a medium heat and dollop round of the mixture into the pan (as big or small as you like)
– cook on one side until the top surface begins to bubble, then flip over and cook for a further minute or so.
– do this in batches, then divide between 2 plates, dollop on yoghurt and garnish with fruit and nuts
