Gym Bunny Pre- & Post-workout Treats

Summer is upon us and it’s time to hit the gym in preparation for bikini season. It’s always a struggle to get motivate to don my trainers and leave the comfort of tea and cake on the sofa in lieu for sweating it out on the elliptical, but these ‘gym bunny’ bake and smoothie make it all the more worthwhile.

Gym Bunny Banana-Almond-Oatmeal Muffins

‘Gym Bunny’ Banana-Almond-Oatmeal Muffins

Ingredients:

1 ripe medium banana

1 tbsp smooth almond butter

1/2 cup plain Greek-style yoghurt (use full-fat for added moisture)

1 medium egg

1/8 tsp nutmeg

1/2 tsp groung ginger

1/2 tsp ground cinnamon

1 tsp baking powder

1/2 tsp baking soda

1 scoop unflavoured whey protein

1 tbsp Stevia

(or sub unflavoured whey & Stevia for 1 scoop vanilla flavoured protein powder)

1/4 cup full-fat milk

1 cup ‘quick-cook’ porridge oats

Method:

(preheat oven to 180*c & prepare a muffin tray with 6 muffin cases)

– mash 1 very ripe medium banana with almond butter and yoghurt

– mix in egg, spices, baking powder, baking soda, whey, Stevia and milk

– stir in oats

– divide mixture between muffin cases and bake for about 15 minutes (cover top of muffins with foil after 10 minutes if browning too much)

– once baked, remove cases from tray and store in airtight container

*warm in microwave for 15 seconds before eating, or enjoy warm from the oven

** serve with a dollop of Greek yoghurt

Banana-Vanilla Shake

Ingredients:

200ml semi-skimmed or full-fat milk (can be subbed for a non dairy alternative)

1 scoop unflavoured whey protein

1/2 very ripe medium banana

1/2 tsp vanilla extract

Method:

– place all ingredients in a blender and whizz up until smooth

*you could add ice
