Not your average bowl of Cornflakes

starter for a dinner party, as they are so easy and fast to put together.

Ingredients:

2-3tbsp Malaysian chilli sambal/chilli paste

5 shallots, finely diced

5 cloves garlic, finely chopped or minced

sugar and salt, to taste

handful or 2 of ikan bilis (dried anchovies)

handful or 2 of peanuts

box of Cornflakes

groundnut oil

Method:

– fry nuts in oil until golden brown, then set aside

– fry ikan bilis until golden brown, then set aside

– using the same oil, fry the shallots and garlic

– add the chilli paste and stir until fragrant and the oil begins to separate

– add sugar and salt to taste, along with a splash of water to dissolve the sugar

– test the consistency of your paste by dipping a cornflake into the pan – the chilli should stick to the cornflakes without turning it soggy – if too thick, add a little water; if too thin, reduce a little more

– when ready, take paste off the heat and stir in the Cornflakes

– leave to cool

– once cool, stir in groundnuts and ikan bilis

*store in an airtight container.
